• Green beans provide an excellent balance of both soluble and insoluble fiber, which promotes gut health and lowers cholesterol. • Green beans deliver high levels of vitamin K, vitamin C, folate, and dietary fiber for very few calories. •Research indicates that boiling or steaming green beans actually increases the availability of their phenols, flavonoids, and antioxidants, a benefit particularly pronounced in organic beans.
A study out of Egypt compared green beans farmed using organic practices to conventional and found organic green beans with more sugars, minerals, bioactive compounds and antioxidant activity. But once green beans went through processing for packaging through steaming or boiling, frozen organic green beans had more stable nutritional qualities than conventional for up to four months.
