• Protein & Amino Acids: Einkorn boasts roughly 30% - 50% more protein than modern wheat and most other staple grains, featuring a different gluten structure that many find easier to digest.• Lutein (Carotenoids): Giving the grain its distinct golden hue, einkorn is packed with lutein, containing up to 3 to 4 times more than modern wheat. This powerful phytonutrient is excellent for eye health. • Trace Minerals: Einkorn is essentially a "mineral sponge". It is highly concentrated in Zinc, Manganese, Phosphorus, and Iron. • B-Vitamins: It provides significantly higher levels of B-vitamins—specifically Riboflavin (B2) and Pyridoxine (B6)—which help the body convert food into energy. • Phytochemicals: It is rich in natural antioxidants like phenolic acids, phytosterols, and alkylresorcinols.
